Baked Popcorn Chicken with Honey-Mustard-Yogurt Sauce

A baked version of one of my favorite snacks, popcorn chicken served with a honey-mustard-yogurt sauce!

Ingredients

For the chicken...

- 2 chicken breasts, cut into 1 inch pieces

- 1 tsp fresh ground black pepper

- 1 tsp kosher salt

- 1 tsp smoked paprika

For the breading station...

- 1/2 cup whole wheat flour

- 1 tsp fresh ground black pepper

- 1/2 tsp kosher salt

- 1/2 tsp smoked paprika

- 1 tsp garlic powder

- 1 tsp onion powder

- 1 egg, beaten

- 1 cup panko break crumbs

For the oven...

- non stick cooking spray

For the dipping sauce...

- 3 tbsp coarsely ground mustard

- 3 tsp honey

- 2 tbsp greek yogurt

Directions

1) Pre heat oven to 400 degrees.

2) Line a baking sheet with aluminum foil and lightly coat with non stick cooking spray.

3) In a large bowl season the chicken pieces with the black pepper, salt, and smoked paprika set for the chicken. Set aside.

4) Prepare your breading station by getting three small bowls as you'll have three stations or steps to breading.

5) Bowl number one will consist of the flour, black pepper, salt, paprika, garlic powder, and onion powder. Whisk to combine.

6) Bowl number two will consist of the beaten egg.

7) Bowl number three will consist of the panko break crumbs.

8) Moving the chicken from bowl one to two to three. Dip each chicken piece in the seasoned flour and shake off the excess flour, next move the chicken into the beaten egg and coat, then dip the chicken into the panko bread crumbs and toss to coat and last set aside on your prepared baking sheet.

9) Repeat the steps within your breading station until you've breaded all your chicken pieces.

10) Before baking in the oven, do a light coat of your non stick cooking spray on the top of your laid out chicken pieces.

11) Bake for 30-35 minutes or until golden brown.

12) While your chicken pieces are baking, make your dipping sauce by whisking together the mustard, honey, and yogurt.

13) Remove from oven and transfer to serving plate with your dipping sauce.

14) Serve and enjoy!
